Making Park Winters Fig Jam

A Small-Batch Process Rooted in the Land

From harvesting ripe Mission figs on the property to crafting each batch by hand, our simple ingredients and small-batch process, makes for a taste that reflects the season at Park Winters.

Tucked into the grounds of Park Winters, our fig trees quietly mark the start of summer. Each year, we harvest our Mission figs at peak ripeness—typically from mid-June through early July—when their flavor is at its fullest.

From there, the process stays simple and intentional. Fresh figs are combined with warm cardamom, a hint of ginger, and bright lime to balance the natural sweetness. The mixture is gently processed to create a smooth, rich texture while preserving the depth of the fruit.

Once ready, the jam is poured by hand into jars, labeled, and prepared for the Marketplace. Every batch is made right here on the property, using ingredients grown on our farm and crafted in small quantities.

The result is a fig jam that reflects the season—sweet, layered, and deeply tied to the land it comes from.
